01 - In a large mixing bowl, mash the ripe banana until completely smooth using a fork or potato masher.
02 - Stir in the almond butter and vanilla extract until the mixture is well blended and creamy.
03 - Add the oats, chopped nuts, chocolate chips or raisins, cinnamon, salt, and chia seeds if using. Mix thoroughly until the mixture becomes sticky and holds together. Adjust consistency by adding more oats if too wet, or more almond butter if too dry.
04 - Using slightly damp hands to prevent sticking, roll the mixture into 12 uniform bite-sized balls.
05 - Arrange the energy balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up and develop the best texture.
06 - Transfer to an airtight container and store in the refrigerator for up to 5 days, or freeze for up to 2 months.
